Spinach Feta Waffles

These crispy golden Spinach Feta Waffles are infused with the flavors of fresh spinach and tangy feta cheese making them a perfect blend of wholesome goodness and irresistible taste.
STEP 1
Preheat waffle iron.
STEP 2
Combine Krusteaz Buttermilk Pancake Mix, water, egg, vegetable oil, spinach, feta, and sumac in a large bowl until just combined.
STEP 3
Lightly spray waffle iron with non-stick cooking spray and place 1/3 cup waffle batter in the center of your preheated waffle iron. Close and cook according to manufacturer directions or until golden brown.
STEP 4
In a small bowl, combine tomatoes, cucumbers, olive oil, scallions, mint, and salt.
STEP 5
Place your waffle on a plate, add a dollop of labneh (or Greek yogurt), and cucumber salad. Finish with a sprinkle of additional scallions.
STEP 6
Waffles can be wrapped in wax paper and then placed into a freezer bag and frozen. To serve, remove and reheat.
