Raspberries and Cream Stuffed Waffles

Servings: 8 waffles


3 cups Krusteaz Belgian Waffle Mix
1 1/3 cups water
1/3 cup oil
2 eggs
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla
1 cup fresh raspberries


Spray waffle iron with cooking spray and heat while preparing batter. 

Stir together waffle mix, water, oil and eggs until well combined. 

 Add powdered sugar and vanilla to softened cream cheese, mixing until smooth.  Fold in raspberries.

Place 1/4 cup waffle batter into heated waffle iron. Place 1-2 tablespoons of cream cheese filling on top of batter, then add another ? cup batter on top of cream cheese layer. (Make sure to completely cover cream cheese layer with batter so filling doesn't stick to waffle iron.) Close waffle iron and cook for 1-2 minutes or until golden brown. 

Serve with syrup, whipped cream and raspberries, if desired.
